I also think that the defense Quintessences is early/late game damage lost. You're going to be squishy, that's something that you have to accept as Varus. If you're going to play passively in the lane, then you're going to get owned. I would really suggest you try more offensive quintessences.
I feel like if you're building a critical build, it would make more sense to max your W. Instead of your Q. I don't really understand your reasoning for using that skill progression with that style of build.
On your bruiser build, I'm not sure why you buy last whisper first, once again, I feel like your not really understanding WHEN to buy the items. Yes, it's a good item and will help cut through armor, but I don't really think that it's useful until later in the game. I would switch the Black Cleaver with the Last Whisper, at least, as the black cleaver scales better earlier in the game.
You also messed up the formatting on your Boots of speed in your item explanations. Also, if the Phantom Dancer is a "must have" wouldn't that make it a Core item? I feel like this is a very important item on Varus, as it will increase the rate he's able to stack W's, as well as increase his survivability with the movement speed boost. You don't even mention it in the build that you're focusing on his W skill with.
I think some of these changes will fix Varus's "Weak early game" that you feel he has.
Overall, I think you should re-read and edit how you say things. It's hard to focus on any information in the build, as you have so many needless words. Better written = Easier read = More helpful to the people that you're trying to help.
-item sequence. You get a b.f. sword then a vamp scepter, but then go straight into I.E. It is almost always preferable to finish the recipe when you have all the pieces...I'd get a bloodthirster immediately after getting those two, as bloodthirsters are better the earlier you get them, as they will grow.
-Runes: Marks, seals, glyphs all look good. Quints won't really help you all that much though. If you are trying to get a bit of a defensive edge with them that's fine, but armor and magic resist are much more effective when you have health to back them up with. You get BV and
-Template: You credit Jhoijhoi for the template, but then you don't use it. That seems a bit odd; a more standard format would make everything much more attractive.
Everything else looks pretty good though. Consider the above; if you can make some improvements I will upvote this guide.
