Maxing W after E is one way to build him, and depending on who you face - you may want to decide to level W a bit more, or even max it second. A good example would be against Irelia. However the damage is highly underestimated. Being able to pick it up, you have roughly a 2 second CD, shorter later in the game due to CDR. In can not only clear creeps fast (allowing you to take your jungle/their jungle, but also allowing opportunity to gank, while denying them a lot of vision with a pushed lane. You have one of the fastest creep-clears due to your Q. The slow also increases which is fantastic. The majority of the time your damage will come from your true damage and skills early on, and your Q>W in terms of damage able to trade. Sustain can be accomplished through lifesteal, Wriggles, Health Pots, and even level 1 W will give you the sustain if you can out trade them by a lot (which Olaf tends to do).
Trinity Force IS a good item for Olaf. I use it often on him in higher ELO games, and for bruisers - it is fantastic. Although many prefer Frozen Mallet and I see why, I used to build it too. However, the health is provided through other items, and the slow is unneeded as you aren't there to deal CC, plus you have already two sources of slows (phage/T-Force and your Undertow). In the case your team needs more slows, or you need health (In a case where you are behind). You pay actually only 435 for the AP. The other stats fully support Olaf. The Sheen proc helps add to the damage, not to mention crit chance, speed, and flat AD as well as several other stats that will help, even minimally. I do agree that Frozen Mallet will make you a tankier, but you are already extremely tanky - and you deal MUCH more damage with T force than Mallet. Going T Force also lowers the need for W a bit for you get more AD from T Force.
As for adding anything else, I'm afraid I've been really busy. When I have time from school and extracurricular activities (darn sports), I'll try to add stuff. Lately my guides have been downvoted quite a bit, and I suppose some of it is due to the lack of updates, especially in lane match ups. I really want to do it, but I can't seem to get far enough to be worth publishing.
As for your vote, it is ultimately to you - I don't believe that my guide is not competitive, nor not viable - it is very viable. However, I was aware that many people will disagree with some choices and that is fine.
-max W after E as having a maxed W will make you a way better duelist than having a maxed Q and your Q will never be a damage source, it will be just for the utility;

P.S: you really should add that your Ultimate is one of the few things that stops
