Any champ that's fed can hyper-carry his team, but theres some champs that even if their doing relatively bad once they get their gear they will simply fk everyone up.
Master Yi, i've seen my bro come back from a 0-9 score to a 12-10 score in a few minutes. Once master yi gets his proper gear he can backdoor the **** out of everything and kill an enemy that is a litle bit behind his team in positioning.
same concept applies to tryndamere. Nocturne too. It's early in the morning so I can't think on any others, but there are quite few out there.

I think just about any Bruiser that can get a good snowball early has the potential to carry.
Also any tricky champions that get fed early: (I.E. Shaco, Teemo, etc..)
Lulu is good... but if you are playing her in that way, she sort of fills the carry role and can't be counted here.
I've seen great Janna Supports carry games more time than I know (not necessarily with kills, but they carried the team on their back the entire time and it would have been a complete turn-around without them).
Also Mundo, Sion...
Amumu can be a ***** to deal with.

Edit: Forgot about Malphite and Nasus. Damn them both. When Nasus gets farmed he can just walk through all of your towers by himself, and Malphite... is a damned rock.

Regarding Amumu - stun ganks with red buff are deadly early levels. Than it is just tanky CC support till late game. In late game with Abyssal there is also noticeable damage.
But with maxed Q sticking on enemy ad carry is soooo funny :D
Mao/Ali jungle own early game for stomping lowelo soloQ.
Naut and shen ownz all, especially Naut kit is ridiculous.
