Wriggle means that you are going to jungle....and the other items are way too expensive for a jungler , until you snowball really hard.
I know the lifesteal plus the attack speed is good and the ulti could make you invincible, but (as many others champions) getting focused by cc and heal reduction will take you to a terrible, unexpected death.
Hybrid usually means that You build AD and AP , and even if i don't see AP in your build, i discourage you to build Sion Hybrid; Tanky AD is the best choice. If you are top Frozen Mallet, warmog, blade of the ruined king, and defence item depending on your enemy laner ( armor like frozen heart ,randuin's or iceborn gauntlet, or magic resist like hexdrinker and spirit visage) . You have TONS OF HP thanks to your E and can eat TONS OF DAMAGE.

I even got a build for jungle offtank Sion. Of course, every build for someone like him is expensive, but if you farm well and get some good ganks you can get it. And then, it is very powerfull. Instead of 2 Warmog's Armor, you should get Frozen Mallet+ Warmog's Armor. This gives Sion 5000 HP and a very important slow to stick to the enemy. Instead of Bloodthirster I would get Ravenous Hydra. It has great synergy with his ultimate, as he heals for a high amount with the aoe dmg. A lategame option instead Wriggle's Lantern would be Guardian Angel, as it increases your survivability way more than Wriggle's Lantern ever could. The passive of it also scales very well with your high HP pool.
