So when in a team fight...do you hit what's in front of you or go for the squishiest thing (not exactly dive the back line but ignoring the tanks)?

General rule works here:
Focus the highest priority target you can safely focus.
I don't ignore tanks but I do try to avoid them and hit the enemy team's carries if possible. Seldom it is but it's worth the try several times.
Occasionally I support people other than my friends (who usually know alot of our own pros/cons and are able to dominate lanes usually) and I see them building BT's first. I originally used to do this when I played Jinx (my favorite adc, whom I don't own) but I now realize that crit is much better in a lot of situations.
Case in point I get a Draven who builds BT first. I love to support Draven's every day of the week but I feel that bot lane lacks the extra damage of having a level 7 Draven with an IE. Are there circumstances/champions in which you don't get crit before lifesteal? (except Corki and Ezreal)
