evildice plays Jayce and Jax for sure. Shen is pretty basic and no specific shen players come to mind
Fatelblade is another jayce player, pretty sure H4xdefender is a jax player. That's about all I know for sure.

I would help you, however I am on the EUW server. I could easily talk to you about top laning, but I'm not so sure how much good it would do you. I play a lot of Jax at the moment, and am also in the midst of making a guide for him (Shameless self-promotion OP), so I would be happy to shed some light on what you should do to win your lane as Jax.
