Depends on the item.
It's not like "Hey, I'm gonna go stack 5 infinity edges because I'm awesome!" Because at any rate you'll still have a low attack speed and you'll be fairly squishy. But if you stack any item, you have to know what you're doing. Stacking Sunfires is effective for tanks because it gives armor and health ALONG WITH damage capabilities. But if you're going to stack Sunfires on Soraka... well what are you going to be able to do? Health and Armor do nothing for you, etc.
Stacking Bloodthirsters on Kat is a good idea because her ultimate scales purely with AD or AP and Bloodthirsters give the most attack damage and lifesteal from one item but only if you can keep stacks up.

as b-wong said, bloodthirster is the best item for ad, 100 damage and 25% lifesteal off of one item? 2 of them is usually what people get but occasionally when you have champions that have skills that scale off of ad (like garen) you might focus more on damage.

ap casters barely stack any one item, but when they do its usually stacking archangels staffs for the huge amount of ap. (200 + 15% of mana)

I see a lot of Doran's Blade stacking in the early game lately. Think it's just a fad, see most of the people who do that fail miserably in the late game.

It's really only if you want that extra edge, and only carries should be doing it (mid or solo top carries, anyways. Bot needs 2 people to control dragon for jungler).

But in all seriousness, they summed it up pretty nicely. Sunfires and Archangels are basically the only items you see stacked towards late-game, mainly because any other item that's worth getting probably has a Unique effect.

I saw a trynd stacking infinity edges the other day in so-low.

For the same reason people stack a lot of things. They don't think there is much of a downside to being one dimensional.

So lately I have been viewing alot of players just stacking one item (for example, Bloodthirster)
I was wondering, is stacking one item.. better than having a wide variety of items?
Now im pretty sure stacking is really expensive, but when you get fed pretty nicely, is it worth doing this (stacking)?
