So, i know the basic differences in the two stances, but what does the two stances fit into? Like what's the pros and cons for them?

Really depends.
Phoenix is AoE and strong AoE at that. It gets a lot of creeps gone fast.
Tiger, is more single damage burst. It is the "faster" creep clearer if you spam it.
Tiger combined with judicial use of Phoenix is a brutal tower pusher.

As Stonewall put it-

"Phoenix
is by far superior compared to Tiger. Phoenix
can also gank as well as Tiger. It is a myth that Tiger is vastly superior to Phoenix during a gank –
perhaps Tiger has a slight edge but nothing dramatic. Phoenix clears faster,
less item dependant, more routes, more sustain, better survivability, basically
it’s better at everything and it’s arguably equal at ganking."

Tiger's easier to play though, you just need to get a rend off and you've done most of your damage already.

Tiger also pushes towers faster. As for faster jungling, that's kind of a myth - past level 5, both times are more or less equal, but jungle timing isn't really important past level 5.

That's in terms of jungle udyr. For lanedyr, tiger is much better - only one attack required to deal damage, and heavy damage at that.
