I'd have to say 
Ahri vs LeBlanc is one of my favorite matchups. The basic principle is that the first one that goes in loses.... MOST of the time ;) Either one can outplay the other.
Both can set up ganks well, and both can escape ganks pretty well.
Another one of my favorite matchups is Morgana vs Thresh. It's 100% skill, although if both supports are of equal skill level, it'll ultimately turn into the person with the better ADC wins.
