Darius deals with those problems a lot easier better imo
His hook is fatal and he has a lot of cleanup potential in flat out fights. I don't think Illaoi can be said the same. But then again I don't play Illaoi enough. One of my masters friends is convinced she's sleeper op in specific comps, though.
I've played a large number of
Darius and a good number of
Illaoi.
Illaoi is just way too frustrating to play.
Even in team fights where it's supposedly her biggest strength, if an enemy has displacement or even a snare, you can bet you're dealing no damage that fight (your W is a displacement and is countered by snares). She also has this point in the late game where you find your self scaling off really hard.
Darius doesn't have that scaling off curve, not as much as
Illaoi, and he's still a threat in most cases.
Darius isn't better at everything, but he's better at most things that makes him the superior pick.
Illaoi is better at asserting lane dominance once she has it because if you gank her and you're melee, one mistake is an easy double kill for her. She is suspectible to ganks, but not as much as
Darius is in my experience.

Darius isnt playing man vs mechanics though. He can easily 1v2 if he's laning hard enough and his sustain isnt dependent on AI.

I see no reason to not just play 2-3 other champions that do pretty much the exact same thing.
You realize everything you say here also describes
