That being said, unless you have someone else on your team who would benefit from the AS (like Irelia, Twitch, Jax... anyone who is AA-reliant) then you can afford to skip or at the very least delay Ardent when Jhin is your ADC.

What you're recommending as a build (both ardent, redempt, miakel solari AND the AP one if I sadly go spellthief's) are in the guide as recommended build paths.
For runes, my build cheat sheet doesn't recommend the healing or shielding green runes, those are just options in the guide itself. My build recommends Cosmic Insight and cookies.
I understand what you mean by saying Coin is wiser. In many circumstances - when you're in soloQ with an unfamiliar ADC, against all-inners, etc - you will want to take Coin.
However, in an ideal world Spellthief's is your go-to. You WANT to play poke Janna, be aggressive, get AP and make a big impact early game if you can. That should be, imo, your default and that's why it's in my cheatsheet as the #1 option.
If you're in a position where you can't play aggressively - like I said a bad matchup for example - then you go with the next best thing and take Coin, protect your ADC and go for a more conventional utility-based build.
And yeah you're right, Janna is a notorious Leona counter. I mention that in the abilities chapter under Zenith Blade :)
Last game, I accidentally ult'ed (ultd? ulted? ult'd?) an enemy to saftey. If I were trying to get better at using Monsoon, how should I go about it? Is it just a matter of practicing a bunch until I one day see where I'm going wrong or is there a simple answer? Perhaps a mix of the two?
This second question, I'm not sure how to even word. If I were to play someone like Morgana, I would just bind someone who's out of place and throw down a Tormented Soil underneath them/auto them and it would help out the ADC a bunch. That champion has less health so they either back up or I find an opening again for my q and we go in and kill them. With Janna it just seems like... there are times where I'm just sitting around and just shielding my ADC and me because Zephyr doesn't do much damage, and I can't land a Howling Gale just yet. So is shielding them the right thing to do or am I just sitting around being useless? As Janna I can't seem to figure out what to really be doing.
The worst thing you can do is panic-ult but it might happen early on in your Jannadventures, I'm sure it did for me. So I think with practice you'll be able to use it better like you said.
Morg's Q W etc is a good engage and good poke. Janna can engage fights, but she's not a poker. The best thing you can do is poke with your auto-attacks, which you should definitely utilize a lot if you're not used to doing that. In bot lane "trades win games" and the thing about Janna is that she makes trading for your ADC very easy. Trading is obviously exchanging blows; not necessarily engaging fights or going all-in. You win a trade when the enemy has less health than you, simple as that. If you can get an AA off on the enemy ADC without him being able to damage you back or his support being able to, you've won a trade. Seems like a small thing; 40 dmg, but if you keep doing it consistently you will keep applying pressure on him (making it harder for him to CS) and you will whittle him down eventually and force him to use potions. Against a melee support this is something that you should absolutely abuse since they can't really attack back, only stay and range or engage on you. Against a ranged (or the enemy ADC) they might strike back and it can be a good idea to use your shield to improve your trading, though I like saving it for the ADC as much as possible.
More important is your ability to improve your ADC's trading though. Like I said, if you apply damage but take none you win a trade. Now imagine 2 ADCs exchanging blows and one of them has 20 AD more and a 100-strength shield on them? Obviously your ADC will win. So anytime your ADC is about to attack the enemy, you should shield him. That's sort of like the offensive use of your shield, it matters more than what you can do in terms of protection (early game at least).
Zephyr, you're right, doesn't really do damage and your Q isn't meant for that either. Janna really just doesn't deal damage outside of her auto-attacks and what she can do with her shield. If you're charging your Q and hoping it'll hit and do more damage, that's a bad idea I'll tell you right away. You shouldn't exactly stand back, but your role is to improve your ADC's trading, AA a lot and peel when the enemy starts an unfavourable fight. When you see a good opport. to engage (i.e. no mana/low health/no support/no flash etc) then Janna is good at that as well. W them or exhaust to slow them, walk up to them because you're not slowed and use your Q and pop it almost instantly when you're in more or less melee range of them. That way it really can't miss.
