If the enemy team is ignoring you and the other tanks in favor of the squishy members of your team, that's probably due to a lack of CC and/or the other team being smart enough to ignore everyone on your team in favor of your carry.

As Duff said, there are plenty of tanky items to choose from, so here's a few that I would grab with GP as an off-tank/off-carry:

-Frozen Mallet: a little more tanky, a little more damage, and that annoying slow
-Infinity Edge: make those crits really hurt and force the other team to pay attention to you
-Bloodthirster: lots of pain and sustain in one package
-Madred's Bloodrazor: great for anybody tanky on the enemy team

Generally I would say just get creative and look for holes in the enemy teams that you can exploit.

In gankplank case I would go for an IE as 5th and either GA or banshee as 6th.
If not gankplank it depends, last whisper is always a valuable pick, point is, know what your char would benefit from and build that.
