Two things:
1. Health quints are mediocre compared to AP/AD/ArPen quints.
2. Don't ask for a lane switch when against kassadin. If you do they will probably feed harder than you will, except if the person you're switching with is caitlyn or some other good AD.

Could you be persuaded to drop the health quints, pick up AP quints, get rid of your silly mana regen everywhere and just buy the damn Tear, armor yellows to avoid being blown up early, and not buy Rageblade? Rageblade's best is when you've been using it for a few seconds, and Ezreal is a burst caster for instant damage.
And a Deathcap would just rain so much more hell than a Rageblade. Also, a Bloodthirster would beat a Black Cleaver since if BC is your only armor pen, you're essentially losing 55 AD and 25% Life Steal for -45 Armor.
EDIT: Also, I pubstomp Caitlyn as Ezreal, mostly because it's rare they get any sort of defensive value (armor) and all of her abilities aren't hard to dodge. Essence Flux, even rank 1, + Trade > Caitlyn
the health quints help his early game immensely. i'm guessing you haven't used them, because they really are great on him. you have so much more sustainability in lane.
the reason why i didn't include deathcap and Bloddthirster in the main build is because they're expensive. i didn't want a guide that just looks aesthetically pleaseing, but something practical. you should have certain items already completed, not being built. rageblade also gives stacks whenever you use spells to, so land your spells and you have instastacks on rageblade and your passive.
and yes, ez can be a burst caster, but if he goes ap. you aren't so much a burst caster with ad, but you do AA alot, so obviously hybrid is in the middle. you unleash your combo, usually dropping the enemy to half health, and at that point they're scared. so you just AA and q a few times and they're usually dead. unless they're beefy champs.
black cleaver is there because its cheaper, price wise. you still have a good damage output with it and sustain from gunblade if you get that far. if you want sustain earlier, buy a vamp scepter!
i don't go ap quints because the 15 ap is negligible to your early game out put, and i like the survivability of the hp quints better.
i use mana regen yellows because ezreal is insanely mana hungry when you're spamming all your spells with out any sense of mana regen. tear slows down your damage output and manaumune isn't that great of an item on ez. and archangel is too expensive, but may be doable if one prefers.
and your comment on pubstomping caitlyn: thats nice, i do too.
you're forgetting what this is: a guide, not scripture to be followed word for word. if you want to change some aspects of it, thats fine, its why the information is there.

rageblade isn't THAT early either, as it comes after Bf sword, which i usually acquire around mid game. and it gives some necessary AP because you're playing HYBRID ezreal

ah! but you will also be autoattacking! so you think after you've blown your combo you have to wait awhile. while this may true, your autoattacks will make it seem much shorter. i was very much into CDR on Hybrid Ez, but then i ran this build, and he doesn't really need it! he has his Q as it is, and the masteries and elixers do what they can.
