I don't understand why you need more and more attack speed in an Olaf build? The attack speed goes up when your hp goes down so you can get a quite fine attack speed, while you are in a fight and you have around 50% hp (giving 50% attack speed). If you can keep this hp ratio you have enough attack speed so you can forfeit some attack speed items, with more defensive ones. Such as a ninja tabi / mercury's treads instead of berserker's greaves.

About Phantom Dancer I am not sure, because it is an obviouslu very good item with movement speed and crit bonus, but I could use an Infinity Edge instead of it because of the good attack damage and crit bonus. Besides you have also Frozen Mallet in your item set, which reduces enemy movement speed on hit, so combined with summoners spells ghost and exhaust, you should not have any problems with catching a fleeing opponent, but as far as I see on build stats, the physical damage is quite low (137). Of course with Atma impaler it goes up by 82, also you can increase it around 70-80 using vicious strikes, but I don't think these are enough for a good dps build.

In my opinion the alacricity seal and glyphs can be replaced by defensive ones, for example health or armor seals or maybe cooldown glyphs (for decreasing Ragnarok cooldown).

In addition to that I did not understand why you need to give 4 more damage to minions monsters, while you can give easily 340 instant damage to them. I think 2.25% the cooldown reduction is much more important (it is around 2 seconds decreased ragnarok cooldown, and 2 seconds before/after can save many lives in battle), so I would skip the damage to minions and decrease the basic 1 attack damage mastery, to increase the cooldown reduction mastery to 4.

why would you get warmog before FINISHING Frozen mallet. If you started mallet, might as well finish it before warmog, makes no sense.
And I would also get impaler earlier, (at least before starks, the dmg (especially with FM and warmog) + defensive bonus make this item a must, and you should get it sooner.
