I've found skill-shot reliant champions can be the most rewarding when you play them well.
Ahri would be my prime example. Landing the perfect Charm, or hitting the entire enemy team with both hits of her Q is always fun! Other than that, being able to save dying teammates, or turn teamfights around as just about any support is also a nice feeling!

I completely agree. Ahri's skillshots can be quite rewarding

Orianna might be hard to learn but she is very fun once you get used to her. You should give her a try:D
Orianna is becoming my main AP-carry mid at the moment! Played a few ranked games with her also and it went very well! She has very nice damage, a temporary ward with her Q, she has support with her (W) speed buff and slow of the enemies and she can protect (E) herself or an ally!
All in all, she is very fun to play with and I love giving a little support too :)

Disgusting Blitzcrank pulls can make you feel like the king of the world. Seriously, it's like a pat on the back, by a giant robot hand. I love it.
I've also found Karthus to be very satisfying. You feel like a real battlefield manipulator between your wall and Q spam, forcing the enemy into bad positioning. And the satisfaction of killing off all the cowards who run away at low health never gets old.
Granted, pressing R isn't hard - but knowing when to use it is still an important skill. For example, sometimes I blow it early in a teamfight - I know I'm going to miss out on all the kills, but if you land it right as your tank initiates it can scare the **** out of pubs and will generally make one or two enemy players lose focus for a second, or run away completely. Free teamfight victory.
It also makes you work on your map awareness - nothing is more depressing than missing a free double kill in bottom lane because you weren't paying attention.
tl;dr blitzcrank grabs=win, Karthus map control=win

You can't peddle papooses with a dancing monkey.
I feel like this is sort of like a date-matching website with a Champion.
It sounds like to me you enjoy using characters who has a kit of ready and powerful abilities that have power early, mid, and late game.
It's just my hunch, but I'm guessing you also like skillshots. Skillshots are definitely very gratifying if you can land them. Xerath is my personal and practical choice for you. His lethality and range for his attacks makes the kill:ragequit ratio as close as it could possibly be.
Additionally, his Lotus of power tends to give him a bunch of movement speed, low cooldown, rediculous range, and some heavy cc.
