Heres my top list of must learn champions in general to carry ranked game:
1. Jax (great laner and strong in teamfights and excels in lategame, just learnt him and barely lost any games)
2. Wukong (godly aoe ultimate and great mid laner that shuts down many ap carries)
3. Cho'gath (safe pick but can also be a carry)
4. Jayce (strong atm but can't play him properly)
5. Shen (great support carry that allows your team to grow)

Cho'Gath isn't a safe pick. He's a counterpick to champions that can't kill him. He has many counters and hard matchups.
First off thanks for the comment.
My response to this is that I would still qualify Cho'gath as one of the safest pick personally. He has few counters and is extremely hard to bully out of lane because of his sustain through his passive.
The champions that do counter him severely are Warwick and Yorick. In season 3 and with the current meta, both these champions are hardly played in top-lane and if I was to be matched up with them, I would opt for defence masteries and runes and start with a consumable sustained start or cloth 5.

Jungle: (great gankers for solo q and can ultimately set up your team early) Hecarim, Nautilous, Nunu (due to the recent patches that make coutner jungling strong, shaco, eve and lee sin
Mid lane: (personally I just safe pick Cho but of course you can carry hard with any solo lane)
Note: Can I also say that Jax may be easily countered but in my recent 10 ranked game I havn't seen much that do counter him and extremely liking the champion atm. (but then again i havn't vsed a Elise / jayce yet)

And then they do bait it, but yell at you for not having ult at level 4.

Basically anything that is permabanned :P
Thresh, Blitzcrank, Nautilus, Shen, Hecarim (not sure since nerf though)
If that aint good enough for you, and you want to carry the game, go:
Vayne, Tristana, Draven, Ezreal, Miss Fortune.
Get it? Because they are AD Carries! Ha Im so funneh.

You can carry games with support, as I have learned, such as Nami or Thresh, or Sona (all 3 my main supports).
The ease, however, varies depending on lane. Mid lane is generally considered the "easiest" to carry from.
Basically you can carry with any champion you're good with. Unless your team is full of incompetent 'tards that suicide.
In my opinion, to define carrying would be "making plays and choices that impact the game in such way that gives your team an advantage and holds it". It doesn't necessary have to be only the plays you make, but how you influence your team and their gameplay.
