Shingeki No Kyojin is kinda similar to FMA in tone(the manga is better than the anime, but they're both good). So is Berserk, but the anime for Berserk is terrible, so you should read the manga if you're interested.

Joxuu, some more stuff you can check out:
Fate/Zero (720p) (1080p)
Code Ge*** (720p) (1080p)
Code Ge*** R2 (720p) (1080p)
Madoka Magica (720p) (1080p)
Baccano! (720p)
Of course, if you haven't watched Brotherhood then watch that ASAP:
Fullmetal Alchemist: Brotherhood (720p)

Shingeki no Kyojin's biggest issue, right now, is really poor pacing in the last couple of episodes. And a severe lack of understanding the "show, don't tell" rule of storytelling.

Fullmetal Alchemist: Brotherhood (720p)I found Fate/Zero pretty meh. It was slow and didn't feel like it understood its own direction very well. It was pretty, at least, but there are honestly a lot of anime out there that are far better uses of your time.
Code Ge***'s first season is better, even though you have to watch the second to finish the story. It mainly suffers from unnecessary fan service in the second season and not understanding that no one watches it for its mecha elements. It'd be a better anime if the mecha stuff wasn't there. I'd say you should only bother watching it if you enjoy hearing anime characters be strategic masterminds.
Puella Magi Madoka Magica is an amazing deconstruction of mahou shoujo anime tropes. It's one of the best anime I've ever seen. Period. Watch it.
Baccano! is a lot of fun. It takes about seven episodes to really understand what's going on, because it uses nonlinear storytelling of events taking place at four or five distinct points in time, but it has great action sequences and a pretty decent plot (if I recall correctly).
Cudd is also right, if you haven't watched Fullmetal Alchemist: Brotherhood, you should watch it, as well. It more closely mirrors the events of the manga, which the original anime had to diverge from because the manga wasn't complete at the time. It might be worth waiting a bit before starting it, though, because the first few episodes overlap with the original anime, and if you just watched the original that could be annoying.

Although the first few episodes do resemble those of the original, they are presented much better then the original. It really shouldn't be annoying at all because it goes by everything quickly while giving enough information to understand what occurs.
EDIT:
Well school is over and I have about 10 weeks off. I decided that I'm going to cram all the anime I've on my list. Once I've completed those I will just slowpoke through One Piece again.

Just the last couple of episodes? I think the pacing has been a bit of a mess since episode 3 or 4. (remember me complaining about the pacing being way off compared to the manga a few pages back? :) )

Care to give some examples of this?

I've read like one mecha series and seen none, so I'm not exactly knowledgeable on tropes in the genre.
I see where you're grabbing those tropes from though. But Mikasa is entirely different to that robot you're comparing her to. She's a very cold and collected person, and that makes her moments of emotional outbursts all that more interesting(there will be more :3).

Not really, no.
You seem prejudiced against it for some reason. It's not like it was an ***-pull, it was foreshadowed, even if only at one instance(which was played at different times in the manga and anime, and like with most things: I liked it more in the manga).
