BTW I haven't read them all but I've heard many good things about these manga.
Don't blindly recommend things. There's like 5 in that list that don't seem to belong, 2 of which I'm fairly sure of as I've read them.
"I saw [Twilight: Eclipse] in theaters with a girl I was dating at the time. I spent more time staring at my toes and wiggling them than I did watching this abomination. When Edward proposed to Blank Face, I finally looked up with a revelation.
I blurted out loud, in a dead silent theater full of teenage girls on opening night "Wait a minute, Edward has no blood flow. How does he get an erection?" I heard several men laughing, and had several girls turn and stare at me.
I did not get laid that night." - Berengier817

@Absolute.0
The following 4 series have very mature themes. Two of them contain nudity and all of them contain lots of gore.
That said, Berserk and Shingeki No Kyojin are the two best series I've ever read, and they should be at the top of your list if you like serious stories executed almost to perfection.
Berserk
Shingeki no Kyojin
Fullmetal Alchemist
Vagabond deserves a special mention as the art is seriously good throughout most of that entire series.
One Piece is a good shounen. Probably my second rated after Shingeki (which is a much more mature and serious shounen). It has a pretty lighthearted theme most of the time, with the occasional heavier bit, but lots of humor. It has some seriously good fighting arcs, without devolving into continent-destroying super-ultra-mega attacks like Naruto currently is doing. (even if it still might :( )
The Breaker is another good shounen. It rivals OP for that second rated spot of mine. It's a good mix of just about anything that makes a shounen good.
The follow-up called The Breaker: New Waves is kind of a disappointment, but The Breaker still ends in a satisfying way and is well worth a read if you're into the genre.
Densha Otoko is a very lighthearted romance series. It's fairly short, but very sweet and definitely worth checking out if it piques your interest.
Shino-chan wa Jibun no Namae ga Ienai is another very sweet series. This one is incredibly short, and focuses on friendship rather than romance.
Which 5 exactly?
Doesn't matter too much. I'll just cut it down and make a list from my own experiences.

I'm a strong independent black mage who don't need no mana.
I'm at episode 9 of Shinsekai Yori (It has 25 episodes I think).
It is clear that this anime is definitely not bad at all. Now I'll just have to see if it'll keep getting better and better to the point I can safely call it good, and maybe even great.
What I really like about it is the soundtrack. That ending song is amazing, can't get enough of it. That sound at the beginning gives me chills aswell.
That epic OST in the beginning + The first ED
Shinsekai yori, the only anime that completely caught my attention since Bakemonogatari.

"If someone is ****, you point at them and declare "****!". Because this is the internet." - Serpentiferous
"The Internet: where men are men, women are men, and little girls are the FBI." - ???

Ergo Proxy shined towards the end, I mean the very first episodes got me interested, but then it was just informative episodes with fillers (important fillers, like really important :P ) here and there, till like the last 6-7 episodes where it totally made me live those moments of "Oh my god does it mean...no way !", that feeling when you realize that something is way bigger than it seems to be :P
But yea Ergo Proxy was definitely something I enjoyed :D
By the way I disliked the yaoi/yuri scenes in Shinsekai Yori. Unnecessary scenes, totally unnecessary.

I knew I saw 4chan's logo somewhere. I had that sudden clarity moment lol
