When I "invent new builds", all I do is switch around one or two items of the standard build for that champion, or play an AD champion AP and viceversa. If you're making an entirely different build in which none of the items coincide with the popular items for that champion, the build probably sucks ****, because you're not using any of the best items for that champion.

I just randomly shop the ingame store and when I see an item or something where I think: How would that work together with a certain champion?
Then I will look at how I could make a build that synergises with that particular idea and often fail drastically with the build in the end (eg manamune+atmas Singed cuz passive) :3

Don't start a build by picking a bad/mediocre item (or any item for that matter) and then thinking "hmm, what should I add to this and who will I play using this?". Start with a champion, then go to items. Think about the stats that your champion will benefit from given the kit and role you're playing it in, then think of the most efficient way to get those stats. Also remember to adapt based on how well the game is going and what you're facing.
If you don't want to pick a champion, start with a role, then specify what kind of champion you want to play in that role (for example: tanky top laner or high damage top laner?) and think of some general items that work well on that kind of champion. Then pick a champion you feel like trying out (or play a couple of different ones in a row and see which one you like most), adapt the build if necessary based on the champion's kit, how well the game is going or what you're facing and optimise it.
It's not rocket science :P

The whole item thing I do has proven to be a very bad idea, although it has given some hilarious situations. If you want to do it right however, you play a champion, not a build, it is better to do the experimenting the other way around indeed :P

I thought about, how could you use this item to the most usefull way. Of course, you will need a good amount of HP and some MR aswell. About the MR, there is only one item which fits into the AD/MR style:
