In a teamfight, you shouldn't focus olaf first. You kill the carries of the team first. Then you can easily bring olaf down^^.
I know , but I were playing 1vs1 in 5vs5 map, only mid with bufs.. My frind played with OLAF (grrr) and I played with irelia ^,^
You can beat Olaf in a 1v1... just not as Irelia. Olaf's main point of damage is being up close and personal. If you're a ranged carry (Ashe preferably) you can dodge his axes and kite him to win. Watch his buffs and run if he uses his ult. If you're too close, he will hit you with true damage. Not good.
TL;DR: Melee can't beat Olaf 1v1. Kiting will win every time.

But no, just no. Building Armor against olaf is dumb he'll just rape you with true damage.
Imo against olaf, aside from kiting, if you have to fight him, build hp (for true dmg) or more damage than he can do (kill him before he kills you).
Tho fighting olaf 1v1 is not advised at all
