I like vegetables and I kinda think I could follow your list. Why would it make you feel sick if eating meat like once in a month (or a different period of time)?

Once a month should be ok, it's more like if you didn't eat meat for 4 or 5 months or longer and then decided to eat some that you might see issues. Basically, when you stop eating meat for extended periods of time your body stops being accustomed to digesting it, so then deciding to eat it again can be an issue. Almost every long term, entirely meat free vegetarian I know has stomach issues if even a small amount of meat grease gets into their food, let alone if they actually went ahead and ate a decent sized chunk of meat.

Unlike the vast majority of Americans I knew who were jumping on the vegetarian bandwagon, I actually did research before trying it out. Shocking, I know.
