Something I keep asking myself is this: what do I do against hp stacking champions while playing as normally critical chance based champs like Cait? Tbh, I don't even know how letality works now, since it's been a time since it was almost only used by assassins.

Well, for HP stacking champs I tend to find the build with LT is good, but its really just a game to game basis. Like if its your job to kill that HP stacking champ and not anyone else, then I suggest doing that. It's also important though to remember with the First Strike build your job is mostly to quickly kill the squishier champs. So just know your job.

I keep feeling like I need one thousand items to kill like a fed xin, ya know? It's so insane

Is LT the rune, lethal tempo? So yeah, in my low elo hell, there is always some not so squish bruiser/assassin ready to kill me, and chances are that my team won't peel for me or, like I will have a very small window where my teammates will peel a bit, so I have to at least dish some good damage (put down the enemies' shields at least) so my teammates can finish them off - especially bc I may be dead at this point.

Yeah, LT = Lethal Tempo. The thing about Caitlyn is that she is actually relatively good at peeling for herself. Try to set up traps pre-fight around entrances & around places you might use as an escape route. Save E for safety if teams aren't peeling for you as well.
