But I can say if Renekton has no dash you can poke him but I would avoid getting in his flash range otherwise he can flash W you and end up killing you with his full combo. Just stay out of his range and farm.
For Darius you should just stay out of his E range and poke the **** out of him with your Q while maintaining a good distance from his E.
I haven't updated my guide in quite a while due to me being busy and not having much time to play league, and I am unsure whether i'll update it soon. As soon as I have more free time I will try to look more into the new patch and the same goes for the new item changes.

I haven't updated my guide yet and I already know a lot of people prefer aery instead of electrocute. I also prefer taking aery since I like it more.
As you requested I have added a Karma matchup. Hopefully that will help you.
Also refrain from buying Abyssal Mask second item. It only provides you with tankiness and 0 AP. The better choice would be Banshee's Veil. If you already are behind you should still focus on getting more damage since you are more usefull dealing damage.
There are quite a few factors you have to keep in mind before trying to fight someone. As I don't know a lot of details on your game the best I can say is that Ekko is a very mobile champion and is still very capable of killing carries/squishies. If I had to say then Ekko truly shines when mid game arrives and shouldn't be underestimated unless he really is unable to do anything. It's hard to kill Ekko simply because of his high mobility and ultimate, so the only way I can see Viktor killing Ekko is when he doesn't have ult up and when his E is on cooldown. Another scenario that can happen is when Ekko uses his E on you and you manage to stun him with gravity field, the moment he is stunned you burst him down before he can use ult. Other than that you can also just be fed with Viktor and kinda one shot him with Q + aa + E if he is around 50% hp.
BUT do not worry, Ekko falls of in late game while Viktor continues to grow stronger. Once late game arrives you should not have to worry too much about Ekko as you are stronger than him. Also try to hold on to your ult if Ekko still has ult up. The best way you can use your ult against him is when his E and R is on cooldown so that he takes atleast 2 procs from it otherwise use it quickly altogether with your spells to one shot him before he get's the chance to ult.
Dun rarely roams in his games. One of the hallmarks of his game play is that he is super consistent at hitting 10cs/min for the first 20 minutes. Additionally, he solo kills people every game (before he hit master).
Another thing is he almost never dies to ganks. He does a good job tracking the enemy jg and puts out just enough pressure to get the enemy jg to come without actually dying to the gank. This relieves his other lanes.
Finally, his mechanics are sick as **** and he basically 1v9s team fights even in challenger because he hits everything, has incredible positioning and movement, and doesn't use sums unless absolutely necessary.
Something I also noticed and saw is that he doesn't like it when other teammates get in his lane because he doesn't like to share experience from minions. He rather keeps it all for himself so that he can scale faster.

Also in the Kassadin match up, I usually get an early Sheen to help trading, as the increased physical damage goes through his Q shield.
It all depends on how you are gonna play your lane. Thunderlords is the better option if you plan on trading with your Q and E but against a Syndra that could be difficult but if you are able to dodge her Q's well then you can outrade her and in that case Thunderlords is better.
DFT is the safe option and better option if you plan on poking Syndra from a distance and I can see why many take it against her since you wouldn't want to risk getting low on health.
Althought I have considered this before I still take Thunderlords against Syndra but I might switch over to DFT in the near future.
About the Kassadin matchup, I mostly focus on pushing and denying cs since it's hard to kill Kassadin and even more so if he goes corrupting potion. I think it's alright to buy sheen after your first hexcore upgrade so you have good trade and push potential but once Kassadin becomes lvl 6 you're gonna have a hard time trading with him.
I have been thinking about Stormraider's too for a while and I think it is not truly necessary or a much needed keystone on Viktor. Viktor on it's own already has a lot of movement speed from his augment upgraded Q and I don't see the point in getting even more movement speed since the bonus movement speed from Q alone is enough, making Stormraider's Surge less usefull. Obiously Stormraider's Surge works effectively on other champion but not as effective on Viktor.
