If you read it through, the guide is assuming you're not having money problems, however yes another option is to switch it out for the traditional Phantom Dancer, comes down to preference really but IE + Sheen is amazing mid game.
Maybe mid game it is good, but it is late game that AD carries truly shine, and
To be honest I do think your guide is good, but my only problem is the Trinity Force. It can be a very good item on Ezreal, if you can spend the money on it, which most people can't. Also another thing is if people buy Trinity Force they tend to get the item for it early and it will not help Ezreal's late game at all. So, in my opinion, if you really want to be the best Ezreal you can be, I would skip the Trinity Force and go strictly AD. The item does not seem good enough on Ezreal due to its high cost.
BTW, down vote me ALL you want, I'm just stating my opinion. Constructive criticism, guy.

On a side note, and this is me just being really fussy (sorry), but I think you should include the "skill shots based champion in both pro's and con's. My reasoning being that:
1. It has it's advantages (e.g. being able to harass enemies in un-warded brush).
2. People don't pick Ez for a nice auto attack champ, Ashe or Cait are there for that, it's mostly people who like skillshots and their versatile gameplay potential.
But yes, I like the guide! ^_^
