But as someone who plays Camille, Zac, and Zed (was viable at specific patch) as Support champions, I can guarantee you that despite they look as trolling, my high winrate and KDA, says otherwise.
As for when to go offensive or defensive, it depends on what your team lacks, the matchup, and your current gold so let's say we've Nunu JG or Garen Top, both are tanks so being tank as well will cause your team a disadvantage since enemy will already build an item with Grevious Wound that will counter you as well so going pure AD is the better choice here, same if you were against a weak matchup or you ended up with a lot of gold, it's better to invest in damage to abuse the fact that you're ahead and finish the game quickly.

On top of the guide, you already posted, click on [Edit].
Make sure you're in "Basic Setup" tap on your right.
Go to "4. Champion(s)*" on the left.
Choose the hero you're making a build about, again on the empty champion icon next to it.
Select one of the two champions portraits.
Active portrait has a different setup than the other one and that's how you make different builds.
Although just one question, when is it best to use camille as a support?? Which ADC's work best with her?? xxx

Still, Playing Camille as Support is risky because some might think you are a troll pick or instalocker and in other times, your ADC is weak so you have to switch to AD Camille and not Tank Camille in addition to that, if you have another Support which works better than Camille with that specific ADC, Play that Support and not Camille.
