I thought about what you said and I agree with moving down most of them. I have rearranged them further down the list but some such as Malphite are being kept the same to be more objective to overall statistical analysis. It's no secret that Malphite currently holds a 70%+ winrate against Kalista in the top lane and isn't without reason.
It's nothing to be ashamed of though as he is holding the top spot across multiple stat websites for the entirety of preseason at this point as a demonstration of his strength this patch, but that's not to say the matchup isn't winnable in the early game especially like with many of the tanks listed.
I will be moving down the following:
-Sett from Extreme to Major
-Ornn from Extreme to Even
-Maokai from Extreme to Even
-Sion from Major to Minor
-Cho'Gath from Even to Minor
-Tahm Kench from Even to Minor
Let me know if there's anything in particular you would like to see changed as I am still very open to moving down/up champs if necessary, including Malphite.

UPDATE 24/12/2020: Thank you for your continued patience! Obviously it's Christmas time so productivity is a little slower than hoped (Merry Christmas everyone!) but I should be able to finish the guide on schedule. Talk soon!
UPDATE 25/12/2020: Merry Christmas! Hopefully everyone is having a wonderful day with family and friends alike. The guide is far from done but I have a skeleton structure to work with now. I will be able to update this guide continuously throughout the day at various times today to catch up with myself but all is going well. See you soon!
UPDATE 28/12/2020: Sorry about the radio silence guys! I decided yesterday that I was going to postpone mostly until after New Years with all the celebrations. I'll see you all with the finished product early next year. See you in 2021! Merry Christmas and a Happy New Year!
