Nice suggestions i never really made it past the Sunfire cape but i definately get where your goin with that build. To be honest ive never gotten past the sunfire cape ;P the rest are suggetions. Ill be surte to try out your build and if its that awesome ill include it with credits of course. Also Id say the best part of this build is somehow taking on a team 1v4 and winning lol. I did that once against a team by the blue golem buff. Hit one (killed by grogblade) parrleyed crit the other then ulted and finished the last 2 with normal attacks. Prett awesome.

Damage outputs were:
133,278
212,361 respectively.
In the first build, I followed your steps 100%, but I found that by end-game you're a bit TOO tanky, and neglect dps/crit. In my second game, I ran a variant build based on my enemy team. They were DPS heavy, so I built (in the order listed):
Warmog's
Merc Treads (CC heavy)
Atma's Impaler
BF Sword
Avarice Blade
Infinity Edge (Upgrade)
Youmuu's Ghostblade (Upgrade)
Frozen Mallet
I think the Frozen Mallet really shot my DPS up the most. Although crit chance was only sitting around 55-65%, Youmuu's active and Raise Morale allowed me some pretty decent ASPD. Also, finishing the game with ~5k HP, that's +100ATK from atma's passive ALONE. I had a total of about +310 attack from items. Largest crit was 1.1k. I tanked enemy kennen, warwick, sivir, and tryndamere 1v4 and won :)
GG build overall, just make sure you last hit early in the game. Rushing warmogs fast is CRUCIAL
I've played tankplank laning against a gangplank, and I can tell you that Tankplank dominates a normal gangplank. I do just as much damage early-game and end-game (though mid-game lacks in the damage department because of Atma's not being built yet) and the survivability keeps me running stronger. I felt great seeing critplank's parrleys hardly make a dent on me while I could hit just as hard and take out a large chunk of his health.

Though those are great suggestions, Tankplank is an off-tank with the goal of being tough as nails without sacrificing the hard-hitting Parrrleys. Those items are DPS items, while this build tries to maximize health & health regen to get the most out of atma's impaler. I don't think gangplank's a great farmer in the least, his only damaging move is his parrrley and his ult (which shouldn't be wasted on creep waves). Sunfire cape is a good choice to get some armor and still do decent damage
In general, I love this build. Tankplank is definitely the way to go with gangplank, doing just as much damage as a critplank and losing all the squishy normally associated with gangplank. My poor laning phase with tankplank is cured by a regrowth pendant, so I couldn't be happier with this build.
Leave sunfire cape for real tanks - shen, rammus, amumu, who may have a problem farming without it (not amumu, he nuke'em good with his crying and tosing his bandages around). :))
not many people realise how much damage you could put out until they are dead. :)
