My 2 cents:
Depends a ****load on what you want/need to do later in the game. Does your team have a high damage jungler? Then you need to be tanky as a mofo and still be able to peel, or being such a high threat that they either focus you and let your mid/jungle/adc do their shizzle.. If you have the tanky jungler with the peel you can go high threat! There are like 3-4 toplaners that can pull off both and they are terrifying to face later in the game:
* Shyvana
* Nasus
* Trundle
* to certain extent Olaf
Nasus can put out terrifying damage from his q alone and at the same time shut down most aa-based adc (and make any combo-based adc easy to focus down) while building pure tank. Add Frostborn Gauntlet or Triforce to that and you will be terrifying.
Shyvana gets free movement speed, some tanky stats and decent damage from her kit. Add to that the hydra build path and you have most damage you need until way into late game combined with burnout and sunfire. That is two items, one of which gives health and armour. You now have good damage output, good sustainability and 4 items left which can add to your tankyness (one of them being boots). Not much cc, but being a huge damage threat early to mid game and continues to be a good fight presence even late.
Trundle is the most balanced champion in lol according to most, since he can counter tankyness and at the same time take the edge off ad-based damage dealers if he can get close enough! Great single target damage and huge ability to stick to your target. My build suggestions here is depending on the enemy team. If they have a main tank I suggest going 3 items damage with BotrK, Hydra and Gauntlet/Triforce. Add to that a Randuins and Spirits Visage you can get all the health and resistances you need from their tank via ultimate. If they are a more damage oriented opponent I would maybe not suggest Trundle in the first place, yet if you do I suggest BotrK, Triforce, tankyness as frick and do the splitpush dance with good wards.
Olaf is another Bird altogether. His threat is simply that you can't stop him from reaching your adc or apc unless you kill him with ultimate active. His e shreds anyone, he has good sustainability and can build very tanky. His passive basically forces you to be tanky to get any use of it or you die before you gain the increase in attack speed. His q and e scales very nice with ad, yet you can't really afford to buy more ad than absolutely necessary to get the tankyness required to use the kit!

Olaf? Shyvana? Dr. Mundo? Nasus after a certain tank-threshold? Vladimir? Renekton? Vayne? Quinn? Rumble? Jax? Singed?
Most of these are winnable (some very much so), but they aren't a stomp.
Haven't seen one in a long time, but I don't remember it being a difficult matchup. I liked running (even pre-rework) Olaf against him, in a very come-at-me-bro attitude because they would always try to engage with E-Q and after that it was either a melee brawl where Olaf (usually) has the advantage or they would try to run away and take axes in the back all the way to tower or death.

Good job picking a video where a Gold 120cs-3-level-8-kill lead Yasuo beats a bunch of newly level 30s + Bronze + low Silvers in normals as your example. It's not as if I couldn't have done that with Master Yi or Tryndamere or anything.
Yes, Yasuo is ridiculously strong right now, but could have picked a more representative video though.

Didn't really care about quality, just saw this video on reddit and remembered that I neglected to mention him. But the video does show why and how he is so strong, so worth.

^ First of all, Rengar has both seen play as an assassin as well as a tank in solo queue, not sure whether the nerf straight up killed both (or either, even).
Secondly, could you do everyone a favor and just type Rengar and Riven? It took me forever to even figure out who you meant with rOPen, lol (I'll admit part of that is because I'm stupid, but still).
Okay, I'll do it from now on.
I used to pretty much like win 70% of matchups as Rengar but imo he is weak against everyone. The Q time which got decreased also made it really hard to do anything with the lag problems which have hit EUNE, too.
Riven on the other hand doesn't seem to be too weak and a skilled player is probably still able to be a victor as her as often as he used to.
