How should we know? Everyone has different preferences and playstyles. Play whatever is free to develop a taste and go from there.
What is easy for one is hard for others. Keep playing the game and you'll develop a taste for what you enjoy. Then you will be able to narrow down the champions you want based on your preferences.

Garen, Ziggs, Dr. Mundo, Ryze (mash buttons!) would be easy to learn champs that have a forgiving nature.
I think Garen is probably the easiest champ to learn on, no mana, does good damage, can be tanky and has good sustain.

I used to care about KDA, now I care about CS and Objectives.
annie is really easy. When jungling, you can't really go wrong with warwick if you are new. Udyr and nasus are also easy. Basically anything with a lot of point and click skills with some excptions.
edit: for supports, the easiest one is prohably sona.

I AM NOT AFFECTED BY ELOHELL. NOOBS AND TROLLS NEVER RUIN MY RANKED GAMES.
I DON'T GET STUCK AND I NEVER GET ONLY 2LP FOR A WIN.
I AM UNRANKED.
