HTTPS means that it's encrypted and that other people can't spy on your connections(well, sites still record the things you do through cookies and such, but the government can't spy on it, for example).

That's pretty awful in any case.
Firefox uses HTTPS automatically where it's possible. (although sites like Yahoo force non-encryption)
You should give Firefox a look. It's probably a bit slower (but still very quick), but the security and customization features and addons in general are far beyond what Chrome offers.
I'll gladly share some awesome addons if you feel like giving it a try.

That makes no sense.. Incognito doesn't make your information safer, it just prevents any traces of data on your own PC, sites can still very much track you.
HTTPS encryption prevents people/sites other than the one you're communicating with and the sites they send information to from seeing your information.
