The time I started having loads of fun while playing this game was the time where I only played it 2-3 times a week rather than no-lifing it and trying to climb :P

You are asking in the wrong place and wrong people. Your situation is completely different from most people in this thread. People in this thread play LoL for fun and nothing happens if they stop and have no consequences on their lives nor their future.
On the other hand, you mentioned in OP that you are under organization, that means it's close to job status for you. LoL is more than game and hobby for you, and you should stop treating it like one if you are planning to go serious. I think you should ask for advice some challenger players that are in same situation as you are, maybe even lcs or ex lcs players if you can reach them.
This is just my non biased view on your situation from your single post, I might be wrong.

Have you tried smurfing to Bronze V? I have a formerly Diamond/Master friend who enjoyed playing with me despite my lower Elo and trashing people in lower queues with stupid stuff like AP
Amumu or AliCrank botlane, etc etc. Although honestly, he's now pretty much quit the game too, so it sounds like only a temporary fix.
Honestly, I would suggest that you speak to your organisation about being demotivated. Perhaps this just honestly isn't your time. Playing whilst unmotivated also isn't in the interest of your organisation, so maybe another hiatus is the pragmatic approach. Of course, I don't really fully understand your situation at all, but from the fact that you say you can't even take 5-6 days break, I'm not sure there's a practical solution (other than some of the things already suggested) to stop you from getting bored of the game.

I can't really recommend what to do, but I can say how it is for me. I don't usually play more games then League of Legends, maybe some Hearthstone games here and there. League of Legends is a huge game. In each game things can happen differently. Baron steals, pent kills, match-ups and so on. It helps me thinking that I am here to play and to have fun. Don't play serious all the time. If you get mad from playing maybe 5 games in a row in Ranked Mode (because you lost more then you won), take a break in Normal Games and have fun. I am not telling you to troll, but there you can take the game less serious. At least its not the same as Ranked Mode. Take some short break. You don't need these 1 weak breaks, just 10-20 minutes helps for me. Could this work out for you?
