You should basically never play AD Kat. I don't know how viable hybrid is after the changes to her Q and R, but AP has consistently been the best.
You shouldn't try to initiate on Xin directly. His Three Talon Strike is a hard counter to your ultimate, and Xin can 1v1 almost everybody any day. He's a bit too tanky to exactly face 1v1 - although I'm not a Kat player, I would recommend simply harassing with Bouncing Blade and Shunpo whenever possible and zoning him, but never directly engaging him. Never use your ultimate if his Three Talon Strike is up, unless you're absolutely confident you can kill him.
Also wait in team fights for him to pop TTS, since any good Xin will wait to use it on you.

I used to main Kat, and have never had that much of a problem against Xin. I use Exhaust/Ignite.

Once I do that, I Shunpo again, then use my ult on him. Since he was Exhausted and I usually have Rylai's, he absorbs all of the damage. The I use Shunpo and Bouncing Blade on him until he dies.
Usually he gets away, but I've only lost a few fights against a Xin.

If your attack is going well, you have walked into an ambush.

Well, it gives a little less damage than Rabadon's Deathcap, but you get such incredible lifesteal and spell vamp. Seriously, I'm pretty sure you can't be killed during your ult against enemies without disables.

I am not a Katarina player, tbh I never played her at all.. but I am an experienced Xin Zhao player.. and tbh Xin is hard to beat 1v1, its very very possible, but it can be extremely difficult..
He has alot of CC and dishes out alot of damage, he combines auto attack with huge burst damage..
With that being said you really cannot take out xin 1v1 unless you are fed, since his TTS counters your ulti pretty hard, he also has E to stay close to you once you use shunpo...
Just try and keep your distance, after he uses his cooldowns will be the best time to jump in and damage him.
