There is no caps on both.
You can have even 300% CrC but still you cant crit more than you hit :P so the stats are "capped" on 100%.
There is no cap on CrD as well.

There's no hard cap, there's only a limit that it becomes impossible to reach.
This is true for any stat. Take armor for example - there's no limit to how high it can go, but realistically, it's impossible to pass 1000-1200 armor (6 Thornmails, Taric aura, Aegis aura, Bulwark, Creeping Death, Malphite Brutal Strikes, etc). That number is a "soft cap" because although there's no actual limit as to how high it can go, there's no possible way to pass that number.
So yes, you can increase your crit damage as much as you want. I-Edge along with a full set of critical damage runes will probably increase it to around 280% or so, and Tryndamere's Bloodlust would increase that further.

And out of curiosity... how much % damage reduction is 1000-1200 armor?

1000 armor is equal to 1000/1100 or about 91% physical damage reduction.
1200 armor is equal to 1200/1300 or about 92.3% physical damage reduction.

Using Tryn for an example. With the runes at lvl 18 you can get to 103% crit. Obviously its only 100%... but the damage he can do in those crits gets capped.
If this is true, anyone know the cap to the damage?
