It's not viable because of the number of draw backs. The benefit to getting some AP and some AD is not worth forgoing a standard Crit plank build.
The ulti has too weak of an AP ratio and his heal late game does a solid job without any AP already. (Generally because GP has life steal coupled with his/her build allowing for LS off of auto attacks, Cure Scurvy is just a kick back benefit. A free cleanse that now doesn't get you out of supresses :/

^This. GP's role has shifted to a tanky DPS role.
AP has not and will not be viable on GP unless they increase scaling on his ult and reduce its base damage.
Now, regarding on hit items, if you build GP this squishy you MUST play him like a caster (he is an AD caster afterall) move in, parrrley, back out, rinse repeat, ult, press E, go in if you know for sure you can get the kill, when you get CC focused press W, then bob back out.
In all seriousness though, unless your playing lich bane MagePlank for the lols (and its fun mind you), don't build AP on him, you are not getting your gold's worth.
@Potatis then you must not see many well placed GP ults, ever see a JARVAN ***** in all chat about dieing from full health by getting hit by nearly every cannonball?

What Zep said about the ult thing is true, you don't just drop it in the middle of a lane, you try and get your team to bring the fight to an opimal location. Like along the sides of the river where it's really narrow and you can only go back or forwards. Traps them in there longer, and if they run back they leave teammates, if they run forwards they run into you.

Currently looking for a team, I'm an amazing skill-shotter and prefer tanky roles (Garen, Renek, Amumu) or straight up AP DPS (Nidalee, Veigar, etc) :3 Although I'm a great Sona too.

I though about putting lich bane in instead of trinity force but that would have made him a total glass cannon.

I don't really like him as much anymore. I can hardly ever get a kill early game on someone going b with low health now, when, before they started changing him, I was always on the prowl for people trying to tele with <400 health.
Of course, that was before they made him ridiculously powerful. But now I think the nerf on his stacks made him a little more balanced.

Guinsoo's Rageblade

It can still spill out some pretty decent damage, but in teamfights his ult drops some really big damage.
