i will address each of your questions in order to how they were asked.
the reaseon for buying Frozen Mallet and Rylai's Crystal Scepter is that while Akali is an ability power user she is also an up close AD type; Shadow Dance and Mark of the Assassin are the major points so Frozen Mallet so she need not rely on Rylai's Crystal Scepter alone.
The reason for Infinity Edge is because of the AD and slight Crit. chance it offers no other reason.
as for Frozen Mallet and Trinity Force Frozen Mallet is a guaranteed slow trinity has no such guarantee and Trinity Force also offers amazing stats so why not?
as for the secrets part i may have over-stated the lack of knowledge but i was designing it with noobs as well experienced players.

Still I don't think Akali needs that much health. She is an assassin who should dive in and out while doing amazing burst damage. You don't need all that health if you are going to leave after a few combos.
For the second build I can tell that you are focusing on an AD Akali. Why build Infinity Edge? Akali no matter AP or AD still relies on spamming her skills. She doesn't rely on auto attacks so she won't be doing much crits.
Since it is AD Akali why don't you max Crescent Slash first? It is the only ability that scales of AD so it would be top priority to max first.
You also build Frozen Mallet and Trinity Force together. IMO you should either get Frozen Mallet or Trinity Force not both. This is like a similar situation with Rylai's Crystal Scepter and Frozen Mallet both provide slows but only one of the will be procc-ed each time.
IMO you should get Trinity Force first and get a Guardian Angel instead of Frozen Mallet late game. As AD Akali you will have a ton of spell vamp so once you revive all you have to do is spam the cr@p out of Akali's abilities to heal a massive amount of health.
I also think you should replace Infinity Edge with Hextech Gunblade. Although your build focuses on AD, Hextech Gunblade is an absolute must for Akali. It synergizes so well with her passive Twin Disciplines and each and every stat is a great benefit for Akali.
I think the guide could use some more info like a Runes chapter and gameplay chapter(like how do you use your skills in combos, fighting different champs). And the secrets chapter isn't really secret. You said most people don't know them but I think it's kind of the opposite. I don't think any AP mid laner would fight a Katarina one on one if both of you on an equal level in terms of farm, fed-ness, health, and level. If people played Akali I'm pretty sure they would notice that "short invisibility spout after leaving your shroud". "obtaining the red buff can be useful as it slows your enemies impeccably and adding to the effect of your Phage and Rylai's Crystal Scepter." also seems to be a thing that I'm pretty sure most people know.
In general I still like the guide. I just think it needs some more info and changes. They are all based on my opinion so you don't ahve to follow them. This is after all your guide and not mine. Good luck :)
