If I can do a ranked SR and face a pure AD carry or AP caster with a hybrid Sion, I'd simply roflstomp anything.

I would say that any char with decent AP scaling and a kit that encourages auto attacks (or any other physical scaling) "could" in the right situations with the right items be built hybrid. They scale with AP and they utilize the physical damage so in theory it could work.
But yes it's all academic because for one reason or another most of the hybrid items in the game are pretty terrible right now.
