Your opponents didn't even seem really seem that good.
Further more lux is an incredibly easy hero to play and get tons of kills with.
So, overall not that impressive.

Through a quick name grab and looking at a few profiles. Most of the opponents were below 25% win frequency in ranked.
Yeah, I laughed when I saw that Eve pop out, hit once throw ignite, and run from a Lux with under 10% health.
I wouldn't say Lux is incredibly easy to get tons of kills with though. All her abilities are skill shots.

Skill shots are the easiest to get kills with.

All you have to do is anticipate movement which isn't hard.

Sorry, video was made from footage from just 4 game, they can't all be winners. So yeah a lot of the opponents were bad. I'll try to get something better for next time, the video was somewhat of a test video to gauge response, which has been almost universally good.
However, I don't really see the point of saying a hero's easy to play. The whole game is a top-down point and click, aside from basic mouse accuracy and anticipation (leading skillshots), what hero-specific mechanics are hard exactly? Coming from a quake 3 and fps background, I never quite understood this.
I see you have twitch and malphite listed that you have builds for. What part of malphite's mechanics are harder than lux? You have a spell that always hits a target when clicked on, amplify damage, one that hits everything around you, and one that will almost instantly hit and stun everything in an aoe. From what I can see, each one of lux's mechanics take more skill to use. And twitch is mostly an autoattack hero that relies on timing and positioning. Even Riot's difficulty rankings (while not exactly accurate) show lux as about double the difficulty as the 2 above heroes.
The argument that skillshot type abilities do more damage doesn't feel valid since that implies something that's easier to execute that you must do more frequently is somehow more skillful than something that's hard to do that lands a bigger payoff? Plus, it isn't actually true for lux's base abilities, just her ult, which hits about as hard as kathus', except you have to actually aim it and be in range. I don't really get it.
I understand positioning and timing and teamplay, those are really skills that come in to play universally, but you're talking about lux in general being easy hence that isn't specific to this case. I feel lux is pretty easy to play terribly, and while she doesn't have the hardest mechanics to master or anything, I wouldn't call her an "incredibly easy hero to play". But if you have suggestions for the heroes I should try next which you feel would make for a more impressive video, I'll gladly consider them.
