Intro
I chose the armor pen Marks because....., well with out them you do not deal nearly enough damage to anyone with armor.
The Flat armor seals give you a much needed bonus to armor in the early game and still help in the late game. I find that early game ganks are much easier to survive with the extra 13 armor.
I chose the Magic Resist Glyphs because jarvan doesnt get much magic resist as he levels and will get devastated by casters without them.
Armor Pen Quints for extra punch.
The Flat armor seals give you a much needed bonus to armor in the early game and still help in the late game. I find that early game ganks are much easier to survive with the extra 13 armor.

I go with a 0-21-9 build for masteries for the tank version and 21-8-1 for dps. I absolutely love all of the "tanky" bonuses that it gives. also Meditation and Perserverance for extra hp and Mana regen helps a little although if you are an aggressive player you will be starved for mana early and mid game.
TANK:
for items i always start with a dorans shield. its hp and armor bonuses are crucial early game.
I go for heart of gold first. then boots, then Randuins omen. Randuins omen is a MUST have item for tanks. Then it's impaler. Stack that with Warmongs, thornmail, and Force of nature and you will be virtually untouchable.
I would like to also suggest that If you see that you do not need either thornmail or force of nature too much, then to get Madreds Bloodrazor. It a great item that seems like it was made for jarvan. It's passive is even better than Jarvan's. lol.
DPS:
For DPS builds (which are way more fun to play), In this case i go with randuins omen just because i like being able to survive a teamfight, and dps items. Madreds Bloodrazor is a must. Black Cleaver helps with armor reduction and attack speed. Atmas impaler is great for bonus armor (suvivability) and it's passive is useless on jarvan without warmongs. Mercury treads are great for their stund, sleep, slow, etc.. reductions. don't be too aggressive early game. try to stay with your partner close enough to you turret to run to it if needed. after you get randuins and merc's treads you should have enough defense to survive a coordinated attack on the enemy champs.
Also, The only reason i get warmongs on dps is because of the impaler passive. If you would rather, you could always forget about the impaler and go with Frozen Mallet and Bloodthirster for the extra damage and health and slow.

I find that laning with xin xao or another character like him works great. They just seem to mesh. i always end up getting at least 3 early game kills with him as my lane partner. I have yet to lane with a caster so i cant help you there. Although a caster with stun is always a good choice.
one thing to keep in mind if you are in a teamfight that isnt going to well is to use ur ult to trap as many of the other team with you and let your teammates run to safety. if you die before the ult's time limit is up it will still stay up even after you die. taking one for the team is sometimes necessary.
