Olaf Passive Ability

First go for the blue buff at level one. smite before the vicious strikes run out to gain health to survive. Then go for wolf then the wraths. at some point at level 3/4 if health is good go for red buff if you have smite. Then the golems then it a good idea to start ganging

end game olaf

If you somehow finish the build (if you have good teammates it will be over) you cannot be killed with you ult vicious strikes and passive. Why it is simple you gain so much life steal you will gain more hp then you take.
