As for Ghost I completely disagree. Using Ghost is about entering a fight with HUGE surprise. Yes flash can be used as a gap closer, but its a one hit wonder with a terribly long cooldown. Use ghost and your more effective during large scale teamfights after your tank's initiation.
When it comes down to it this build is pretty new. Don't knock it unless you have tried it, but it isn't something to solo que with. You need a decent 5s team as well as a tank that can start **** and let you follow. Your job isn't to start the fight, but keep the enemy team around after that gragas cask has split them up.

I like the third build the best, altho the purchase of banshees assumes you will get atmas eventually. consider switching it out for force of nature. You will enjoy it.
Also your use of ghost. Udyr has plenty of move speed already, and move speed is diminished returns. consider running flash instead. It can win games.
Your first build is... wierd. To say the least. You are going for AP/AS/Magic damage hybrid, but you use ghost, meaning people will know you are coming. Because of this they will know to focus you BECAUSE of your squishy build. Sure, you get some health and a little armor, and some decent MR, excluding banshees. The thing is, your banshees will top you off at over 13k gold. Unless you consistently get 13k gold, you are very squishy. Udyr is not a tank, you are correct. But he isn't a hybrid carry either. One or two dps items with three defensive items is ideal.
I like the theory crafting because if you can get close enough and not stunlocked you have some serious potential. I also really like the skill order explanations. Really helps beginners learn how to play udyr.
When i play udyr i play him phoenix last stance, and idk why, but i just dont like it, though it has great benefits. This is my opinion, further its a good guide .

can you please add guardian angel to a list of viable items please? for tower-diving and escaping ive used it a little more often than banshees veil even though both are great =)
Second, I'm not saying you should put Flash over ghost, its your guide, but include it in your "other Choice". I know its "Flash" and viable on pretty much any champ, but at-least including it there would be good.
As for why I take Flash over ghost, it's not because I need it to exit/enter a fight, but rather flash-sun someone trying to escape, as ghost does not make up for flash early game as many enemies can escape to their tower. Also, I nearly always build Trinity, as I use tiger, allowing me 501 MovSpd with Lv5 bear stance, so that covers for the late-game chasing which would normally require ghost.
Again, these are merely suggestions. Nice guide anyway! :P
P.S I know I mentioned this in my last post, and not trying to be clingy, but can you please look at my guide? Its just that since I don't have many posts, and I'm really looking forward to people to see my guide, this is the only way when I comment on other peoples guides =/
I choose to turtle before bear for a few reasons. I only really 1v1 fight to gank the enemy jungle. Shielding on top of your burst damage will cause most enemies to run or risk losing. Udyr's global cooldown is very short, so shifting into bear after turtle should only take a moment. Honestly I use turtle the same way I use tiger, for its activation buff. The AS bonus on a short turtle stance is nice regen too. Bear after and chase. Don't blow your stun to early.
Flash is always 'viable', its flash. The reason I take ghost is that it lasts much longer than bursting flash. Once u use flash your kinda done with it. Ghost allows for a short period of time where you are SERIOUSLY dangerous. For ganks and teamfights I find it much better than flash. If your flashing a great deal you might want to learn to position yourself better instead of relying on it to enter/exit combat.
