Tell me, because I haven't played Jax. Why do people build AP and AD? 'Cause I built Thornmail which did wonders against him.

Rammus and Amumu are my 'completely rape face 1v3 if I have to' champs. Katarina is another favourite. XD

It does, yeah. Of course AP gives him a ridiculous PUNCH when he uses his abilities, but as hybrid he got a nasty sustained DPS, and his ulti/abilities still does loads of damage.
