Well I main Ezreal and I have to say there aren't many safe picks vs him. But I do think a very good lane to build against him would be a lane with a strong ad like graves or corki paired with soraka. Even then you would have to make sure to not get poked or try to trade with him in anyway until soraka reaches lvl 5. Just avoid his w and when he misses trade with him while avoiding taking too much dmg.
well yeah if you focus the soraka down in one burst then sure, but smart sorakas wont get close to the enemy support pre lvl 5. If she does and you fail burst the her without getting the kill you'll risk taking a huge amount of free damage or giving enemy ad kill or two.

are you people really suggesting ashe against ez, really, he eat ashe, varus hes meh. but kog and taric do work on him taric hurts him because his heal and armor make his poke useless on him and as well as most tanky champs

He's one of the safest ADs, I don't think there really is any specific setup that works well against him.
Its really hard/next to impossible to destroy a good ez in lane. The ads I named above are typically strong against him since they outharass him.
