Me too, actually. A lot of champions still don't have a really great build up yet - Alistar, for example. I personally am working on a Malphite guide designed for a solo lane instead of the existing duo lane Malphite or jungle Malphite guides.

I was thinking of a Twisted Fate, Karthas, Annie or Hybrid Pantheon.

TF and Pantheon have great builds up already, but I'm not really a fan of any existing Karthus or Annie builds. :<
