It's because there's a lot less editing to be done.
They can focus a lot more on those few scenes instead of stretching their resources on 2~3 hours of filming to make sure everything just looks good. If they were made to do something that's over an hour long with a proportional deadline, the quality would definitely drop because it would get more complicated.

Also, it seems way more entertaining because the idea wasn't theirs. It's based off Portal, so its naturally more awesome due to the familiarity, without looking plagiarism.

When you look at the bigger picture, professional films have more editors and resources at their disposal to make up for the amount of film time they have to work with. To put it simply, the more film you got, the more editors you're going to have. The main difference is;

1) The smaller films like this one have a crew that's actually interested in the project they're doing.
2) Big film workers mainly do it for the $$$$ for the most part anyways.

It's sort of like college football compared to the NFL.

That's not true. I have films I can name off the top of my head that were both long and enjoyable through every minute of the movie. (Tangled, The Dark Knight, Inception, and Up just to name a few)
