It reaaally depends, if 1 is allowed to kite and stuff, Trynd is out of the table, master yi is probably as well. Jax would probably be my quess, although he's pretty heavily countered by nasus late-game.
It all comes down to builds and counters to every champion, also if that the other person is supposed to chase or no.
Olaf is very strong 1v1 but he's heavily countered by Buurst and kiting.

U won't beat a olaf without burst? AS buff to gud and he's easily kiteable.
Heavily countered by burst was probably (most definately) wrong but he is countered by some sustained damage followed capable of burst.

He can only be killed by heavy sustained damage if you build him correctly ^_^
And you can't kite Olaf... That's part of his kit, he can't be kited l0l.
