Even so you won't really benefit from stacking it. The problem with stacking lots of offensive items is that you become really easy to kill. As Odd One once said in a stream I was watching "Why be able to hit twice as hard if you die three times faster?" Makes sense to me.
Sure you can stack them but any amount of CC shuts you down hard. Jax is such a well balanced champ that he only needs a few offensive items to deal stupid damage, so he CAN build the rest tanky as hell and just be scary and impossible to kill. Let people stack spellvamp items. A good stun or taunt and they will learn their lesson.

I know, but I'm just saying that they made spellvamp unique to make stacking not worth it. Now they made spellvamp non-unique and you can stack it. Seems kinda weird.
Also, I think the reason Jax would probably work really well stacking Gunblades, is that he can
Counter Strike and not get hit by basic attacks and his ultimate makes him pretty tanky.

1. Jax actually indeed becomes more durable the more offensive he builds.
2. Some champions are survivable because of the amount of life steal/spell vamp they get courtesy of building extremely offense heavy.
3. Ultimately everyone should always be building based on the situation.
It's funny to do ARAMs (to kill time) and notice the enemy stacking armor against a heavy magic damage team.
So with all that said, building purely glass cannon as Jax and trying to compensate with spell vamp/life steal CAN work, but it doesn't mean it always will.

Hextech Gunblade gives you amazing lifesteal and spellvamp. not to mention jax's ult as jeffy mentioned gives him armor/mr, plus his e for dodge.

With how the s3 changes are running atm, I can't see why building more offensive isn't the path the season is going to pursue anyway.
Heavy CC > Damage > Tank IMO.
If the enemy team doesn't pack hardcore CC you just skip most defense and go for damage.

Yeah that's a pretty common jax build anymore, and IMO the most effective for him. I might consider changing out the randuin's for a GA, but that's entirely situational.
P.S. Why have i seen so many jax's building almost straight AD lately? It is clearly not at all the best way to build him...
