Then you can simply launch the replay and fraps it later if you wish.

Like said, Fraps. But in most cases it consumes A LOT of FPS, so you'll probably have to lower the settings.

Possible solutions:
LoLreplay: Good for recording everything, and then going back to commentate or something.
Fraps: With proper settings (Mainly resolution and frame rate) you shouldn't experience much of a frame drop from Fraps, but the file sizes are fairly large, and generally it's better to Fraps LoL replays.
Camtasia: Really high quality, Really expensive, has the same problems as fraps. Just get fraps and learn how to set your settings.
In any case, to upload to youtube, you will need to use some kind of screen recording software to transfer your LoL Replay game/clips to an actual usable video file.

I use LoLReplay, I'm happy with it. Only problem with it is that you can not edit anything, so you will probably need FRAPS anyways. But the files LoLReplay saves are WAY smaller :)

For several issues i want to record my League of Legends Gameplay (improving skills, documentation...).
How can I do this? For example in Starcraft 2 you can simply save the replay. I think there's nothing like this in LoL though the pros use such things.
So how do you record the best?
