You're going for a simple guide, which I can understand, but I do believe there is such a thing as too simple. I've seen what the rest of your guides look like, I'm confident in your ability to make even simple guides great.
Sure, she's not the absolute best for said fights and she does fall off a bit in the late game but it's still only a bit. I don't know where you got the "fairly useless" part from, that's a heavy no dawg. She can do so much during fights thanks to her abilities so that saying she doesn't is completely utterly untrue.
What do you tend to build first as part of Trinity Force on Vi? I tend to build Phage for the Rage passive to stick to targets better and in case I end up behind enough that I think I am going to need Black Cleaver instead of TF.
If I am ahead or even I tend to buy Trinity Force. But if behind I'll likely opt for tBC especially if I don't think anyone else on my team is going to build it and I feel like I'm going to play a more supportive role/some tanks need additional armor shredding so my carries can mow them down.
Thoughts on Maw of Malmortius for Vi? Tends to be my go to MR item on her if they have a burst mage such as Syndra or Diana. I may even build Hexdrinker after I finish Enchantment: Warrior and sit on that, not finishing it until I've got the rest of my build done. Nothing like ulting an Annie only to get deleted right after that and having her skip away, burning bear in tow.
I would throw in a caution that holding a lane as a melee like Vi can be dicey against a ranged champion with high burst such as Syndra. I've learned that the hard way.
Would also throw in a caution/note on Cease and Desist that it can land you in some sticky situations if say they Flash into their team or under one of their turrets.
I kind of look at A&B in the sense that if I'm an assassin Vi you can use it on practically anyone that you can outright kill, but if you are doing a more team oriented Vi you should make sure you have follow-up within 2 seconds of clicking on a target to use it.
Combos?
I get Sheen when I can buy if I can't afford the full item I always build Phage components.
When you're behind you should just delay Trinity Force and get deadman's plate/another tank item first, I don't see any situation in which Black Cleaver is better than Trinity Force on Vi.

Do you feel you simply lose too much health or tempo starting raptors?
Appreciate the thought process on Trinity Force. I agree it is a better item for Vi as it fills more of her needs.

However, Vi only needs level 3 to gank properly, so the fastest/strongest way to get an early gank is to buff + buff + wolves. Getting a gank off when the laners are still in their first 3 levels and faster than most other junglers (because people do often go raptors, putting them behind in terms of gank clear) gives Vi the potential to instantly snowball top or mid.
