The real question is are you looking for the highest skill cap (max potential) character or the hardest to do well with due to them being underpowered.
Nid has basically 7 skills to master to play at max potential.
Twitch and Eve are both just sad underpowered. Skarner is also fairly underpowered so doing well with him is impressive.

Lee Sin only has 5 really. 2 of them are utility based and don't really contribute to his damage.
Basically on Lee, you can spam skills and still get a double if initiated correctly.
On topic: I'm thinking Ezreal or Orianna. Ez is slightly UP and he teaches you how to lead skillshots and positioning. Orianna teaches you positioning and proper zoning. If you're looking for a dificult jungler, pick Olaf. He really teaches you to pick your fights because of how low HP he gets. Maokai's a great teacher for counter jungling and ganking.

Gonna teach you Invasion and Counterjungling? hah. Shaco is probably one of the weakest champs in the game atm. His jungling has been screwed with making him much slower than he potentially is. His damage is lackluster, his survival his ****, his CC is unreliable because the box is super squishy and has a very annoying delay time. When jungling countering him is a piece of cake due to HUGE mana costs ...
I think you should try Orianna.. she's a bit hard to play but carries huge benefits and potential
