HP/AP in the sense that you only build liandrys torment is probably nice and would yield damage and still being able to initiate flawlessly.
MR+Armor/AP is just plain stupid in S3 as HP is much much much more cheaper now and more useful all around.
although, you can do an HP/Resistance/liandry would be the most optimal.

Building ap on
Amumu is only when either, you are so fed that you can just kill everyone :3
They only other time I would build a solid ap item, is if you are that tanky that 1. You aren't being focused at all in team fights and 2. You are lacking ap damage and have another tank champ or 2 (like

You can also go the magic penetration build.
Liandry's Torment+
Sunfire Aegis+
Abyssal Mask+
Sorcerer's Shoes+
Rylai's Crystal Scepter+Whatever. Do ridiculous amounts of sustained % HP dmg while still beeing tanky, especially if your last item is something like
Randuin's Omen. Together with your mpen makrs (possibly even glyphs+quints, but others are better), mastery and your passive you penetrate around 100 MR.

I am personally a fan of building extremely tanky on most junglers, as it is primarily your job to start the fights for your team and get out alive. Maybe swap up the boots for
